Salsa Chicken and Rice



4 large half chicken breasts
16 ounces salsa
2 c. uncooked rice
2-3 c. grated cheese

Cook chicken and cube it. Cook rice. After chicken is cooked, mix with salsa and heat through. You can mix the cheese in with the chicken/salsa mixture and serve over rice (top picture), or mix the rice and cheese with the chicken/salsa mixture (bottom picture).

GREAT quick meal!! I've never cooked with salsa before. Someone just told me that Pace Picante sauce is for cooking, is that what you used?

This was Pace chunky salsa. We use whatever we have on hand.

YUM YUM. I use this salsa to make a quick version of Spanish rice, adding peppers and cooked hamburg. Sounds very very good with cheese. Bet this would make a great filling for stuffed peppers. I'm STARVING
